Shahi Tukra

It was Sharan’s birthday as per Tamil calendar.I did not want to make the usual paysam (kheer) as he is not too fond of it. So, I thought of making Shahi Tukra. Shahi means royal and tukra means pieces. Shahi tukra is pieces of bread fried in butter dipped in a thick milk preparation loaded with nuts. This sweet is also called ” double ka meetha ” in certain regions. Double aka double roti is the bread and meetha means sweet.

  • 3 cups milk
  • 1 can (14oz) sweetened condensed milk
  • 3 slices of bread
  • a few strands of saffron
  • 1/4 teaspoon nutmeg powder
  • 2-3 tablespoons butter
  • 6-8 slivered almonds
  • 6-8 chopped cashews
  • 6-8 chopped walnuts
  • 6-8 chopped pistachios
Toast the bread in a toaster and brush it with butter. Cut it into mini triangles and keep aside. Alternatively,you may  fry the bread in ghee ( clarified butter) or oil.
Heat the milk in a heavy bottomed saucepan. When the milk comes to a boil, add the condensed milk, lower the flame and keep stirring till the mixture becomes thick and is reduced to half.
Now add the saffron strands and nutmeg powder and keep stirring the mixture for 1-2 minutes more.
Now turn off the gas and let the milk cool.
Heat butter in a small pan and fry the nuts in it.
Now arrange the bread slices in a tray and pour the thick milk mixture over it. Top it with the fried nuts. Chill it in the refrigerator and serve.
