Roasted Asparagus

We did a lot of grilling and roasted veggies in the oven for the July 4 weekend and roasted asparagus with garlic and parmesan cheese was one of them. This roasted asparagus is so easy to make, ready in minutes and so delicious and satisfying. It is slightly crisp on the outside and tender inside.

Did you know that before harvesting, asparagus spends up to three years in the ground? Also, white and green grow asparagus grow on the same plant, but, White asparagus has lower antioxidant and nutritional content than green spears. There are lot of other interesting and fun facts about asparagus some of which,  I would prefer not to discuss those at the eating table! So here is how I roast and season asparagus.

Ingredients;
1 bunch asparagus
2 tablespoons olive oil
2 cloves garlic minced or 1 teaspoon garlic powder
1/2 teaspoon salt
½ teaspoon black pepper
1 tablespoon lemon juice
1 ½ tablespoon grated parmesan cheese

Preheat oven to 450 degrees Fahrenheit
Wash the asparagus and pat dry. You don’t want any water which will end up steaming the asparagus in the oven.
Trim or snap of the woody ends.
Line them on a baking sheet
Drizzle olive oil, salt, pepper and minced garlic or garlic powder.
Roast on oven for about 12 to 15 minutes. Thinner asparagus cooks faster.
Squeeze some lemon juice and sprinkle with parmesan cheese and enjoy!
