Eggless Coffee liqueur brownies

 

I guess by now, most of you must be aware of the fact that I’m a big chocolate addict. Another of my weaknesses is coffee.A day without a cup of my ‘filter coffee’ would not be a day well started. And what about a combination of both that too a combination where you bite into less of flour and more of chocolate and coffee?..Well wouldn’t that amount a bonus treat? So, presenting the eggless brownies for all you choco coffee freaks out there!

 

Ingredients:
For the brownie:

  • 1 cup all purpose flour
  • 1 cup butter at room temperature
  • 2 cups light brown sugar
  • 3/4 cup sour cream
  • 1/4 cup coffee liqueur
  • 1 ounce bitter sweet chocolate squares
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon vanilla extract
  • a pinch of salt

For the frosting:

  • 1/4 cup butter at room temperature
  • 4 tablespoons baking cocoa
  • 1 tablespoon instant coffee granules
  • 1 1/4 cups confectioners sugar
  • 1-2 tablespoons warm water

Method:
In the top of a double broiler over low heat melt the chocolate, stirring it frequently. If you don’t possess a double broiler, you can make one by placing a heat proof bowl over a saucepan. The bowl should fit securely over the saucepan so that neither steam nor water can escape.Place the chocolate in a bowl. Allow the water in the saucepan to come to a boil and place the bowl on top. Turn off the heat under the saucepan and leave to stand for a while until the chocolate is melted.

Chocolate may be melted in an ovenproof bowl at 225 degrees F.
Also, you may use a microwave oven. Break the chocolate into small pieces and place them in a microwave safe bowl. Microwave uncovered for 1 to 1-1/2 minutes stirring after every 30 seconds. Keep this aside.
Preheat oven at 350 degrees.
In a large mixing bowl beat the sour cream, butter, sugar and vanilla until light.
Add the melted chocolate and coffee liqueur.
Sift the flour,salt, baking powder and baking soda and fold it well into the liquid mixture.
Pour the mixture into an 8 inch greased pan and bake for 30 minutes or until a tester inserted comes out clean.
Allow the brownies to cool while you prepare the frosting.
Combine butter, cocoa and coffee granules in a mixing bowl. Gradually stir in the confectioners sugar and mix well until smooth. Add warm water if required to adjust consistency. Frost the brownies and enjoy!
