Eggless Butter cookies

OK so this time I’m not claiming that this one is for guilt free eating. I admit that this one has a good amount of butter and sugar, but a delicious, scrumptious  melt in the mouth taste. Best of all my little one loves it!
 This a very very simple recipe for butter cookies using very few ingredients most of them readily available in the pantry. Just try it and I’m sure you will keep coming back for more.

Ingredients (Yields about 30 cookies)

  • 2 cups All purpose flour
  • 2 sticks/ 1 cup unsalted butter at room temperature
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cardamom powder or vanilla extract
  • 1/4 teaspoon salt

Method:
Preheat the oven to 350 degrees Fahrenheit. Lightly spray 2 baking sheets with cooking spray or line with parchment paper.
In a large bowl, combine all-purpose flour, baking soda, cardamom and salt with a wooden spoon or whisk. Set aside.
In a separate large bowl, and using an electric mixer, beat butter and sugar until light and fluffy, scraping the bowl as needed with a rubber spatula. Add vanilla extract (if using )and beat again.
Now combine the dry ingredients with the butter sugar mixture and knead using your hands to form a smooth dough.
Make small lemon size balls and flatten them using your fingers. Place them on the baking sheet leaving some space between every other cookie.
Bake for 10 minutes or until slightly firm around the edges. Do not over bake. Cookies will continue to bake for a few minutes after they are removed from the oven. Remove them from oven and allow them to sit for sometime before transferring to wire racks. Cool cookies completely before storing in an air tight container.
