Dabeli

Dabeli is street food originating from Kutch in Gujrat, India. Dabeli literally means ‘to be pressed’ in Gujarati.Dabeli or kutchi dabeli constitutes of a potato curry made with a special dabeli spice, spicy crunchy peanuts, pomogranates and black grapes pressed in between a dinner roll!

Ingredients for the Dabeli:

    • 6 Pavs ( Dinner rolls)
    • Dry Garlic chutney (recipe below)

 

    • Dabeli masala (recipe below)

 

  • Green chutney (recipe below)
  • Sweet chutney (recipe below)
  • butter
  • potato curry (recipe below)
  • fine sev
  • finely sliced black grapes
  • pomogranate
  • 15 peanuts
  • asafetida (a pinch)
  • Chilli powder
  • salt

Method:
Roast the peanuts,remove the skin and make them into halves.
In a skillet/ frying pan add 1/2 teaspoon oil and drop the peanuts. Sprinkle a pinch of asafetida, chilli powder and salt and saute the nuts for a minute. Keep them aside.

Prepare the chutneys as follows:

The Dry Garlic Chutney:

Ingredients:

  • 8-10  Garlic cloves peeled
  • 1/4 cup khopra (dry coconut)
  • 4-5 Red Chillies
  • 1/4 teaspoon Cumin seeds
  • 1/4 teaspoon Coriander seeds
  • 1 teaspoon Sesame seeds
  • 1/4 teaspoon Amchur (Dry Mango) powder
  • salt
  • 1 teaspoon oil

Method:
Heat oil in a skillet/ frying pan and add all ingredients and saute for a minute. Allow to cool and grind into a powder.

 The green chutney

Ingredients:
·Cilantro (coriander/ dhania)-1 cup
·Mint -1/4 cup
·ginger- one inch piece
·garlic- 2 cloves
·green chillies-2-3
·a very tiny piece of tamarind
·salt to taste
Method:
Mix all the ingredients and grind to a smooth paste adding very little water.
The Sweet chutney
You will need 12-15 pitted dates and Tamarind (about the size of a lemon) soaked in water for about 20 minutes. Grind them into a smooth paste and add water as required.

Dabeli Masala
Ingredients:

  • 1 tablespoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Fennel seeds
  • 5-6 Red Chillies
  • 1/2 teaspoon pepper
  • 1/4 teaspoon Dry ginger
  • Garam masala (2-3 cloves, 1 cardamom, mace and 1 stick cinnamom)

 

Method: Dry roast all the ingredients and grind into a powder.

The Potato Curry
Ingredients:

  • 4 Potatoes ( boiled, peeled and mashed)
  • 2 tablespoons Dabeli masala
  • Lime juice (from 1 small lemon)
  • Salt
  •  sugar
  • Oil
  • Chopped coriander

Method: Heat oil in a wok/ kadai and add the dabeli masala, salt, sugar and lime juice. Add the potatoes and stir till all ingredients are mixed well. Garnish with chopped coriander.

For assembling the Dabeli:
 Butter the pavs and warm them on a griddle. Split the pav into halves and apply a spoonful of green and sweet chutneys and sprinkle some dry garlic chutney. Now stuff the pav with the potato curry and sprinkle pomogranate, black grapes and peanuts. Garnish liberally with fine sev and serve.
