
I love plain simple vanilla muffins and this is a fool proof recipe for egg less vanilla muffin. If you follow the measurements exactly there is no way you can go wrong. The secret to good muffin making is to just fold all ingredients together. Avoid over mixing / blending of the ingredients. I have used all purpose flour. You may use self rising flour in which case you need not add baking soda and baking powder.
- 1 and 1/2 cup all purpose flour
- 1 cup milk
- 3/4 cup sugar
- 1 stick/ 1/2 cup unsalted butter
- 2 teaspoons vanilla essence
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 lemon
Method:
Melt the butter. Keep it aside.
Add the juice of 1/2 lemon to boiling milk. Cool the curdled milk and keep it aside.
Combine all the dry ingredients ( flour, sugar, baking soda and baking powder) in a mixing bowl.
Add the melted butter and vanilla essence.
Add milk little by little and fold well.
Now prepare the cupcake pan with cupcake holders.
Pour the cupcake mix in the holders.
Bake in the top rack of oven at 350 degrees farenheit for 15-20 minutes or until a toothpick inserted comes out clean.
