Chocolate chip cheesecake brownie

 

Wishing all readers a wonderful 2017..Let’s start the new year with something sweet so that we have an absolutely amazing year with great events followed by greater memories. This cheese cake brownie is an absolute delight for a dessert and I ended up making it twice during the christmas break..You can prepare the brownie from scratch using my brownie recipe which is what I suggest or are you are running out of time and want a dessert quick fix???.. then go ahead and use a ready made brownie mix using the package instructions and assemble the cheese cake..So without much further ado let’s get started…

Ingredients:
For the brownie:

  • 1 cup all purpose flour
  • 1 cup butter at room temperature
  • 2 cups light brown sugar
  • 3/4 cup sour cream
  • 1/4 cup coffee liqueur
  • 1 ounce bitter sweet chocolate squares
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon vanilla extract
  • a pinch of salt

In the top of a double boiler over low heat melt the chocolate, stirring it frequently. If you don’t possess a double boiler, you can make one by placing a heat proof bowl over a saucepan. The bowl should fit securely over the saucepan so that neither steam nor water can escape.Place the chocolate in a bowl. Allow the water in the saucepan to come to a boil and place the bowl on top. Turn off the heat under the saucepan and leave to stand for a while until the chocolate is melted.

Chocolate may be melted in an ovenproof bowl at 225 degrees F.
Also, you may use a microwave oven. Break the chocolate into small pieces and place them in a microwave safe bowl. Microwave uncovered for 1 to 1-1/2 minutes stirring after every 30 seconds. Keep this aside.
Preheat oven at 350 degrees.
In a large mixing bowl beat the sour cream, butter, sugar and vanilla until light.
Add the melted chocolate and coffee liqueur.
Sift the flour,salt, baking powder and baking soda and fold it well into the liquid mixture.
Pour the mixture into a greased 8 inch baking pan/brownie pan and bake for 30 minutes or until a tester inserted comes out clean.
Allow the brownies to cool while you prepare the cheese cake mix.


For the cheesecake:
Ingredients:

  • 16 oz softened cream cheese
  • 8 oz whipping cream
  • 1 cup sugar
  • 1 cup chocolate chips
  • 1 teaspoon vanilla 
Method:
Beat cream cheese and sugar until smooth using a hand mixer. Fold in whipped cream vanilla and chocolate chips.Spread over the brownie.Refrigerate for 4 hours.
Enjoy with toppings of your choice.
