Beans poriyal/ Beans poduthuval

I hope all of you had a lovely mother’s day. I had a wonderful one with my son making it absolutely beautiful for me. Just feels like yesterday when he was a baby in my arms and today he is a smart little seven year old trying to create surprises for his mom on mother’s day.Hubby dear also ensured that I had a good day by treating me to a shopping spree and eating out.
I would also like to specially thank my mother and mother-in law, the two most gorgeous ladies instrumental for making and shaping my life and teaching me all the wonderful things!
Incidentally today’s recipe is the first recipe that I ever learnt from my mom. It is called beans poriyal by Tamilians and beans poduthuval by people from Kerela (that’s where my hubby has his family roots from). Tender and crunchy green beans tempered and flavored with freshly grated coconut makes this simple dish so delectable.



Ingredients:
  • 3 cups fresh green beans chopped finely
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black gram)
  • 2-3 red chillies
  • 7-8 curry leaves
  • a pinch of asafetida
  • 1/4 teaspoon turmeric powder
  • salt to taste
  • 1/2 cup freshly grated coconut
  • oil for tempering
Method:
Heat oil in a wok/ kadai and add mustard seeds until they splutter.
Toss in the urad  dal and stir till it turns golden.
Now add the red chillies, curry leaves, asafetida and turmeric powder in quick succession and give it a stir.
Add the chopped beans and salt and cook covered till the beans are done.
Top it with freshly grated coconut.
We typically serve this with rice and a gravy dish like sambar.
