Banana Bread

What do you do with overripe bananas? Throw them? or make a sweet dish out of them?..make banana bread? Well, here is a healthy version of the Banana Bread..It uses whole wheat flour, brown sugar and olive oil. So no butter..no refined flour and refined sugar..a good reason for you to not go on a guilt trip of sinful indulgence on something sweet! 

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup brown sugar
  • 1 overripe banana
  • 4 teaspoons orange zest
  • 1 1/2 cup orange juice
  • 1/4 cup yoghurt
  • 1/4 cup olive oil
  • 1/4 cup walnuts
  • 1/4 cup craisins
  • 1 pinch salt
  • 2 teaspoons vanilla essence
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Method:
Combine the orange juice, yoghurt and olive oil and stir them together nicely till it looks like a beaten egg. You can use a blender for the same. Keep this liquid aside.
Combine the flour, sugar, salt, orange zest, baking powder and baking soda in a mixing bowl.
Mash the banana and add it to the dry ingredients.
Slowly pour the liguid and the vanilla essence and fold it nicely with the dry ingredients till it forms a smooth paste.
Add the walnuts and craisins.
Grease a bread pan and pour in the mixture into it.
Bake in a preheated oven at 350 degrees centigrade for an hour or till a knife inserted comes out clean.
