Baked oatmeal

A house is not a home unless it contains food and fire for the mind as well as body.
-Benjamin Franklin
I thought let me start the day with a sweet quote and some sweet and healthy breakfast.

A perfect source of vitamins and fibre and just right for all ages, the oatmeal needs no introduction. Weightloss experts suggest it as one of the best breakfast options. So what are we waiting for let’s head straight for my favorite version of the baked oatmeal!

  • 2 cups oats
  • 1 medium apple finely chopped
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts
  • 1 1/4 cups fat free milk
  • 1 1/2 cup boiling water
  • 1/3 cup brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon olive oil

Cover the raisins with boiling water and let it stand for 5 minutes.
In a big mixing bowl combine all other ingredients and let it stand for 5 minutes.
Drain the water from  the raisins and combine them with the oat mixture.
Grease a baking dish and transfer the mixture into it.
Sprinkle some more walnuts.
Bake uncovered at 350 degrees for 30 to 35 minutes.
