Aloo gobi is a vegetable preparation of potatoes and cauliflower. It goes well with chapattis, rotis, phulkas and puris. It is a very good option for the lunch box.
- Cauliflower-1 medium
- Potatoes- 2 large
- Coriander for garnishing
- Green chillies-2
- 1 inch ginger
- Turmeric (haldi) powder-1 teaspoon
- Coriander (dhania) powder- 1 tablespoon
- Mustard seeds- ½ teaspoon
- Cumin (jeera) seeds- ½ teaspoon
- besan (chick pea flour)- 2 teaspoons
- 1 pinch asafetida
- Oil
- Salt to taste
Procedure:
Grind the ginger and green chillies into a paste and keep aside.

Separate the cauliflower florets and cut the potatoes into small blocks.
Heat oil in a wok/ kadai and add the mustard and cumin seeds. When the seeds start spluttering, add asafetida and turmeric powder.
Now include potatoes and cook for 5 minutes adding salt and the ginger chilli paste.
Then add the cauliflower.
Then add the cauliflower.
Cook for 10 minutes more.Once the cauliflower and potatoes are done, add the coriander powder, chick pea flour and switch of the gas after giving it a stir. Garnish with coriander.
