Simple Thali

Recipe for dal makhni
Ingredients:
  • 1 cup  black urad dal and a handful of kashmiri rajma
  • 1 medium onion
  • 1 tbsp ginger garlic paste
  • 2 medium tomatoes pureed
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1- 1/2 teaspoon Salt
  • 1/2 teaspoon garam masala
  • 1/4 teapoon Rajma masala
  • 1/4 cup heavy cream

 

Soak the black urad dal and kashmiri rajma red kidney beans in water overnight (about 6-7 hours). Drain the water and add fresh water (about 5 cups) and
pressure cook it for 7-8 whistles.
If I’m using instant pot, I put the it on pressure cook (high) for 20 minutes.
Chop the onion and fry them in a large kadai wok till golden. Add the ginger garlic paste and saute till raw smell goes away. Add tomatoes, turmeric powder, chilli powder, salt and 1/2 teaspoon garam masala and 1/4 teaspoon rajma masala. Stir to form a smooth paste.
Add the boiled kidney beans with water and simmer for 20-25 minutes stirring occasionally till smooth and blended completely with the gravy. Now take about 1/2  tsp of kasoori methi and add it crushing between palm of your hands. Add 1/4 cup heavy cream and simmer for 5 more minutes. Serve with rotis or rice.
 
Recipe for mutter paneer
Ingredients:
  • 1 medium onion
  • 1 medium tomato
  • 1 red pepper/capsicum
  • 1/2 tsp cumin seeds
  • cashews-a handful
  • 1 cup green peas
  • 500 gms cubed paneer
  • 1 tsp turmeric powder
  • 1 tsp chilli powder
  • 1/2 tsp dhania jeera powder
  • Garam masala/ MDH kitchen king masala a pinch
  • kasuri methi- a pinch
  • Oil
  • Salt
Pour oil in a wok and fry onions until translucent. Add red pepper,  tomato, turmeric, chilli powder, dhania jeera powder and cashews and fry till veggies become soft. Cool and grind into a paste.
In a kadai, add cumin seeds and once it becomes brown add the paneer and fry till its golden brown. Now add the ground paste and the green peas. Add salt and cook on sim till the peas is done. Add a pinch of garam masala and kasuri methi.
Serve with hot phulkas and enjoy.
Recipe for simple baingan ki subzi
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 medium onion chopped
  • 1/2 medium tomato chopped
  • 4-5 medium brinjal
  • 1 tsp- turmeric powder
  • 1 tsp chilli powder
  • 1/2 tsp dhania jeera powder
  • oil
  • salt
 
Pour oil in a wok and add mustard seeds and once they start spluttering add cumin seeds. Next add onions and  fry  until translucent. Add half  tomato and cook till oil seperates. Add turmeric, chilli powder, dhania jeera powder. Add the brinjal and salt to taste; cover and cook till brinjal is soft and done.
 
Recipe for guacamole
Although not Indian, we love guacamole with everything. We pair it with chips, bread, rotis, rice and anything you could think of!
 
The pickle is store bought cut mango pickle.
